  • 1 lb Chicken Wings Whole or cut-up, seasoned to perfection.
  • 6 slices Bacon Crispy bacon; use turkey bacon for a lighter option.
  • 2 medium Jalapeños Fresh, sliced thinly. Use seeds for added heat.
  • 1 cup Pineapple Chunks Fresh or canned.
  • 4 cups Cooked Rice Day-old rice is best for frying.
  • 3 tbsp Soy Sauce Low-sodium option recommended.
  • 1/2 cup Spicy Yum Yum Sauce Store-bought or homemade.
  • 2 stalks Green Onions Chopped for garnish.
  • 3 cloves Garlic Minced.
  • 2 tbsp Vegetable Oil For cooking; coconut oil can be used.

Cooking Steps

  • Fry the bacon in a large skillet over medium heat until crispy. Set aside on a paper towel to drain.
  • In the remaining bacon grease, cook the chicken wings seasoned with salt and pepper until golden and cooked through. Keep warm.
  • Sauté the chopped jalapeños and minced garlic in the same pan until fragrant.
  • Add the cooked rice and pineapple, stirring until heated through.
  • Drizzle soy sauce over the mixture and add the crumbled bacon. Stir to combine.
  • Serve the fried rice topped with crispy chicken wings and a drizzle of Spicy Yum Yum Sauce.
  • Garnish with chopped green onions and serve hot.

Notes

Use day-old rice for the best texture, and feel free to adjust the spice level by removing jalapeño seeds. Prep your ingredients before starting to cook.
