Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, mash the ripe bananas until smooth with some texture.
  • In another bowl, mix together the mashed bananas, vanilla extract, and brown sugar.
  • In a separate bowl, combine the oats, flour, cinnamon, and salt.
  • Fold the wet ingredients into the dry ingredients until just combined.
  • Grease an 8x8-inch baking dish and pour in your banana mixture, smoothing it out evenly.

Topping and Baking

  • In the bowl with the dry ingredients, mix in the softened butter using your hands or a fork until crumbly.
  • Layer the crumble topping evenly over the banana mixture.
  • Bake for 30-35 minutes until the top is golden and bubbly.
  • Let it cool for a few minutes before serving warm with ice cream or whipped cream.

Notes
