  • 1 piece onion, chopped Adds a lovely aromatic base.
  • 2 cloves garlic, minced Essential for depth of flavor.
  • 2 tbsp Cajun seasoning Use a blend you love for maximum flavor.
  • Salt and pepper to taste Adjust based on broth saltiness.

Preparation

  • Heat oil in a large heavy-bottomed pot.
  • Sauté onion and bell pepper until softened, about 3-4 minutes.
  • Add garlic, and stir for 30 seconds.
  • Pour in chicken broth and Cajun seasoning; bring to a gentle boil.
  • Reduce heat and stir in shredded chicken; cook for 2 minutes.
  • Gradually stir in heavy cream while keeping the heat low.
  • Simmer for 8-10 minutes; season with salt and pepper.
  • Serve garnished with parsley or green onions.

Notes

This soup is meal-prep friendly and can be stored in the refrigerator for 3-4 days. Freeze without cream and add before reheating for best results.
