Preparation

  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • In another bowl, whisk together the milk, eggs, and vanilla extract.
  • Pour the wet mixture into the dry mixture and gently fold together, leaving some lumps.

Cooking

  • Preheat the oil in a deep fryer or large pot until it reaches 350°F (175°C).
  • Drop spoonfuls of the batter into the hot oil and fry for 2-3 minutes until golden brown on one side before flipping.
  • Remove doughnuts from the oil and drain on a paper towel; dust with powdered sugar before serving.

Notes

Let the batter rest for about 15 minutes before frying for extra fluffiness. Don’t overcrowd the pot while frying.
