Ingredients
  

Meatloaf Ingredients

  • 2 lbs Ground beef (80/20) Base of the meatloaf.
  • 1 medium Onion, chopped Adds sweetness and depth.
  • 1 cup Breadcrumbs Absorbs moisture and binds the meatloaf.
  • 1 large Egg Binding agent; can substitute with a flax egg for plant-based option.
  • 1/2 cup Ketchup Enhances flavor and adds moisture.
  • 2 tbsp Worcestershire sauce Adds rich umami flavor.
  • to taste Salt & Pepper Essential for flavor enhancement.

Macaroni and Cheese Ingredients

  • 8 oz Elbow macaroni
  • 2 cups Shredded cheese Preferably a mix of cheeses for the best flavor.
  • 1 cup Milk
  • 4 tbsp Butter

Loaded Mashed Potatoes Ingredients

  • 2 lbs Starchy potatoes, peeled and cubed Russets recommended for creaminess.
  • 1/2 cup Milk
  • 4 tbsp Butter
  • to taste Salt & Pepper Season to taste.

Collard Greens Ingredients

  • 2 cups Chopped collard greens
  • 1 cup Chopped cabbage Adds freshness.
  • 1 tbsp Oil For sautéing the greens.
  • to taste Salt & Pepper Season to taste.

Bacon Pimento Corn Muffins Ingredients

  • 1 cup Cornmeal
  • 3 slices Bacon, cooked and crumbled Can omit for a vegetarian option.
  • 1/4 cup Pimentos Adds a tangy flavor.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine ground beef, chopped onion, breadcrumbs, a beaten egg, ketchup, Worcestershire sauce, salt, and pepper. Mix until thoroughly combined.
  • Shape the mixture into a loaf and place it in a baking dish.

Baking

  • Bake the meatloaf for about an hour until browned and cooked through.

Cooking the Sides

  • While the meatloaf bakes, bring a pot of salted water to a boil and cook the macaroni according to package instructions. Drain and return to the pot.
  • Add shredded cheese, a splash of milk, and butter to the macaroni, stirring until creamy.
  • In another pot, boil peeled and cubed potatoes until fork-tender. Drain, mash with a splash of milk and butter, seasoning well.
  • For collard greens, sauté in a pan with a splash of water and oil until tender. Season with salt, pepper, and vinegar.
  • Mix cornmeal with cooked bacon and pimentos; add wet ingredients and pour the batter into a greased muffin tin. Bake until golden.

Serving

  • Once the meatloaf has rested for a few minutes, slice and serve with macaroni, loaded mashed potatoes, sautéed greens, and corn muffins.

Notes

Allow the meatloaf to rest for at least 10 minutes before slicing for better moisture retention. Experiment with different cheeses in the macaroni for varied flavors.
