  • 1 cup frozen peas Frozen is fine for convenience.
  • 2 tablespoons fresh thyme, chopped Adds aromatic notes.
  • 1 teaspoon lemon juice Balances richness.

  • 1/2 teaspoon black pepper Adjust to taste.
  • 1 tablespoon olive oil For sautéing.
  • 2 pre-made pie crusts Use quality pre-made crusts.
  • 1 egg beaten For egg wash on the crust.

Instructions
 

Preparation

  • Preheat your oven to 400°F (204°C).
  • In a large skillet, heat olive oil over medium heat and sauté onion and garlic until translucent, about 3-4 minutes.
  • Add diced carrots and celery, cooking for another 5 minutes until softened.
  • Pour in the heavy cream and stock, stirring to combine and letting it simmer to thicken.
  • Fold in lobster meat and frozen peas, simmering for 5 minutes.
  • Remove from heat and stir in thyme, lemon juice, salt, and pepper.
  • Fit one pie crust into a 9-inch pie dish; pour in the lobster filling.
  • Cover with the second crust, sealing edges and cutting vent slits.
  • Brush the top crust with beaten egg.
  • Bake for 30-35 minutes until golden brown.
  • Let rest for 10-15 minutes before slicing.

Notes

For best results, use the freshest lobster and allow the pie to cool before cutting to prevent a soupy filling. Leftover pot pie can be stored in an airtight container for up to 3 days.
