Ingredients

For the Cheesy Jalapeno Bacon Baked Potatoes

  • 4 large Russet potatoes Large and starchy for the fluffy texture.

  • 1/2 cup Jalapenos Fresh, sliced, or pickled for added heat.
  • 1/2 cup Bacon Turkey bacon for a healthier option or regular bacon.
  • 1 cup Broccolini Optional addition for color and nutrition.

For the Sauces

  • 1/4 cup Chimichurri sauce For freshness and complementing the steak.
  • 1/4 cup Creamy chipotle sauce Rich with a smoky kick.
  • 1/4 cup Honey sriracha sauce Adds a sweet and spicy contrast.
  • 1/4 cup Mango habanero sauce Fruity heat for excitement.

Instructions
 

Prepare the Steak

  • Let the Tomahawk steak sit at room temperature for at least 30 minutes.
  • Sprinkle generously with salt and pepper.
  • Preheat grill to medium-high heat or use a hot heavy pan.
  • Place steak on the grill/pan and cook for 5-7 minutes.
  • Flip the steak and continue cooking for another 5-7 minutes for medium-rare.
  • Use a meat thermometer to check for doneness, aiming for 130°F (54°C).

Bake the Potatoes

  • Preheat oven to 400°F (204°C).
  • Prick potatoes with a fork and bake for 45-60 minutes until fork-tender.
  • Slice potatoes in half and scoop out some flesh.
  • Mix potato flesh with cheddar, jalapenos, and bacon, then spoon mixture back into skins.
  • Bake for another 10-15 minutes until melty and golden.

Cook the Broccolini

  • Steam or sauté broccolini in olive oil and a pinch of salt for 5-7 minutes.

Serve

  • Plate the steak and baked potatoes, drizzling with sauces.
  • Let steak rest for 10 minutes before slicing.

Notes

Check potatoes after 45 minutes to avoid dryness. Store leftovers in an airtight container.
