Sweet Potato Base

  • 2 medium sweet potatoes, sliced into 1/4-inch rounds Sweet potatoes are naturally sweet and creamy.
  • 1 tbsp olive oil Adds moisture and helps crisp the sweet potatoes.
  • 1 tsp sea salt Enhances all the flavors.
  • 1/2 tsp black pepper Hints of spice to balance the sweetness.

Toppings

  • 4 oz brie cheese, cut into small pieces Creamy richness complements the sweet potatoes.
  • 1/4 cup fresh or dried cranberries Dried cranberries preferred for chewiness.
  • 1/4 cup pecans, toasted and chopped Toasting enhances their flavor.
  • 1 tsp fresh thyme leaves (optional) Adds aroma and earthy notes.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Line a baking sheet with parchment paper.
  • Pat the sweet potato rounds dry and toss them in a bowl with olive oil, sea salt, and black pepper.

Roasting

  • Arrange the sweet potato rounds in a single layer on the baking sheet.
  • Roast for 15–20 minutes, flipping halfway through.

Topping

  • Top each round with a piece of brie and a sprinkle of cranberries.
  • Return to the oven for an additional 3–5 minutes until the cheese is melted.

Finishing Touches

  • Remove from oven and top with chopped toasted pecans and fresh thyme if desired.

Notes

Make sure to use high-quality olive oil and keep sweet potato slices uniform for even cooking. Leftovers can be added to salads or sandwiches.
