In a large bowl, mix warm milk, melted butter, sugar, and active sourdough starter until combined.
Add flour, salt, and instant yeast (if using), stirring until a shaggy dough forms.
Turn dough onto a floured surface and knead for 6-8 minutes until smooth and elastic, or knead in a stand mixer for 5 minutes.
Place dough in a lightly oiled bowl, cover, and let rise until doubled, about 3-4 hours (shorter if yeast is added).
Gently punch down dough and divide into 12 equal pieces. Shape each piece into a tight ball.
Arrange rolls in a greased 9×13-inch baking dish, spacing slightly apart.
Cover and proof for 1-2 hours until nearly doubled in size.
Preheat oven to 375°F (190°C). Brush rolls with beaten egg if desired.
Bake rolls for 18-22 minutes until golden brown and hollow sounding when tapped.
Remove from oven, brush with melted butter if desired, and cool slightly before serving.
