Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, heat the olive oil over medium heat. Season chicken breasts with salt and pepper and brown for 4-5 minutes on each side. Remove and set aside.
  • In the same skillet, sauté onions and minced garlic for about 3 minutes until translucent.
  • Add sliced mushrooms and broccoli florets, sautéing for 5 minutes until softened.
  • Stir in the rice and cook for an additional 2 minutes.
  • Pour in chicken broth and heavy cream, stirring to combine as it begins to bubble.
  • Nestle the browned chicken breasts back into the skillet, covering them with the rice mixture.
  • Cover with a lid or foil and bake for 25-30 minutes until the rice is tender.
  • Garnish with fresh parsley before serving.
