Instructions
 

Preparation

  • In a bowl, mix lemon juice, olive oil, garlic, thyme, rosemary, salt, and pepper.
  • Place chicken breasts in the slow cooker and pour the lemon herb mixture over them.
  • Add chicken broth to the slow cooker.

Cooking

  • Cover and cook on low for 6-8 hours or high for 3-4 hours.
  • About 30 minutes before serving, add rice to the slow cooker and mix well.

Serving

  • Serve hot and enjoy the lemon herb chicken with fluffy rice.

Notes

Leftovers can be stored in an airtight container in the fridge for 3-4 days. Great for meal prep and can be frozen for 2-3 months. Adjust seasoning to taste, and consider adding veggies for nutrition.
