  • 1 lb large shrimp, peeled and deveined Fresh shrimp elevates the dish.
  • 1/2 lb ground beef Use a leaner blend to reduce grease.
  • 1 cup long-grain rice, uncooked Important to toast before adding broth.
  • 2 1/4 cups chicken broth Vegetable broth can be a substitute.
  • 1 each green bell pepper, diced Add color and flavor.
  • 1 small red bell pepper, diced
  • 1 medium onion, diced Enhances flavor.
  • 2 stalks celery, diced Adds crunch.
  • 3 cloves garlic, minced Crucial for seasoning.
  • 2 tbsp olive oil, divided Used for sautéing ingredients.
  • 1 tsp smoked paprika Provides a smoky flavor.
  • 1 tsp Cajun seasoning Add to shrimp for seasoning.
  • 1/2 tsp thyme Enhances the overall flavor.
  • Salt and black pepper, to taste Season to personal preference.
  • 2 tbsp fresh parsley or chives, chopped, for garnish Adds freshness.

Instructions
 

Preparation

  • Prep all ingredients by chopping the bell peppers, onion, and celery, and mincing the garlic.

Cooking

  • In a large skillet over medium heat, heat 1 tablespoon of olive oil. Add shrimp seasoned with Cajun seasoning and cook for 2-3 minutes on each side. Set aside.
  • Add ground beef to the skillet and cook until fully browned, breaking it into crumbles. Remove and set aside with shrimp.
  • Add remaining olive oil to the skillet and sauté diced onion, celery, bell peppers, and minced garlic for 4-5 minutes until soft.
  • Stir in the uncooked rice and toast for 2 minutes.
  • Pour in chicken broth and bring to a boil, then reduce heat, cover, and simmer for 18-20 minutes.
  • Once rice is tender, mix in the cooked shrimp and beef and combine gently.
  • Serve hot and garnish with fresh parsley or chives.

Notes

Let the dish rest a few minutes to meld flavors. Experiment with spices and feel free to substitute shrimp and beef for chickpeas or other veggies for a vegetarian version.
