Ingredients
  

For the baked potatoes

  • 4 large large baking potatoes Hefty potatoes that can hold the filling.

For the filling

  • 1 pound ground beef or lamb Main protein, can use beef for rich flavor or lamb for a twist.
  • 1 cup mixed vegetables (carrots, peas, corn) Adds color and healthy benefits; use leftovers as needed.
  • 1 unit onion, diced Adds depth of flavor; avoid chopping too close to your eyes!
  • 2 cloves garlic, minced Elevates the dish; can substitute with powdered garlic if needed.
  • 1 cup beef broth Keeps filling moist and flavorful.
  • 2 cups mashed potatoes Can use leftovers or make fresh; a little butter and cream enhance flavor.
  • to taste unit salt and pepper Essential seasonings to enhance flavors.
  • as needed unit olive oil For sautéing; butter can be used for richer flavor.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Wash the baking potatoes and pierce them with a fork. Coat them with olive oil and roll them in salt.
  • Bake the potatoes for 45-60 minutes until tender.

Filling

  • In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic and sauté for 2 minutes until fragrant.
  • Add ground beef or lamb and cook until browned. Break up the meat as it cooks.
  • Stir in mixed vegetables, pour in beef broth, and simmer for 10 minutes. Season with salt and pepper.
  • Once the potatoes are done, cut them in half and scoop out the insides, leaving a small border.
  • Mix the scooped potato with the meat mixture.
  • Stuff the potato skins with the filling and top with mashed potatoes, creating peaks with a fork.
  • Return to the oven for another 15-20 minutes until tops are golden brown.
  • Serve and enjoy!

Notes

Make ahead by prepping the filling in advance and storing it in the fridge. This recipe is versatile; use different proteins or vegetables as desired.
