Ingredients
  

For the Filling

  • 2 tbsp Unsalted Butter Melted for sautéing
  • 1 tbsp Olive Oil For sautéing the vegetables
  • 1 Medium Yellow Onion Or use red onion for a sharper bite
  • 2 cloves Garlic Minced
  • 8 oz Cremini Mushrooms Can substitute with shiitake or button mushrooms
  • 1 tbsp Fresh Thyme Or dried thyme if fresh isn’t on hand
  • Salt & Black Pepper To taste
  • 1/2 cup Dry White Wine Optional; can substitute with vegetable broth
  • 8 oz Cream Cheese Can substitute with ricotta or goat cheese
  • 1/2 cup Parmesan Cheese Or Pecorino Romano for added flavor
  • 1 cup Gruyère Cheese Or substitute with Swiss or Fontina
  • 1 tbsp Dijon Mustard Adds extra flavor; can skip if desired
  • 1 Large Egg For egg wash; can substitute with milk or cream
  • 2 tbsp Fresh Parsley For garnish

For the Pastry

  • 1 package Puff Pastry Store-bought or homemade as desired

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large skillet, melt the unsalted butter and olive oil over medium heat.
  • Add the sliced onion and sauté until translucent, about 3–4 minutes.
  • Add the minced garlic and cook for another minute.
  • Add the cremini mushrooms and stir until wilted and released their juices, about 5–7 minutes.
  • Season with fresh thyme, salt, and black pepper. If using, add the white wine and let cook down.
  • Remove from heat and mix in the cream cheese, Parmesan, and Gruyère until well combined.
  • Let the filling cool slightly.

Assembly

  • On a floured surface, roll out the puff pastry into a rectangle.
  • Spoon the mushroom filling down the center of the pastry.
  • Cut diagonal strips along the sides of the dough, about 1 inch apart.
  • Fold the strips over the filling, alternating sides to create a braid. Seal well with egg wash.
  • Brush the top with egg wash for a golden finish.

Baking

  • Place the braid on a parchment-lined baking sheet and bake for 25–30 minutes or until golden brown.
  • Let cool slightly, garnish with fresh parsley, and serve.

Notes

Let the filling cool before adding it to the pastry to avoid sogginess. Rolling out the dough improves flakiness.
