Instructions
 

Make the Caramel

  • In a medium saucepan, combine sugar and water. Stir until dissolved.
  • Bring to a vigorous boil for 4-5 minutes until it reaches a deep amber color.
  • Remove from heat and stir in butter and salt until melted.
  • Gradually whisk in heavy cream and let cool.

Temper the Egg Yolks

  • Whisk egg yolks in a separate bowl. Slowly add a splash of warm caramel mixture while whisking to temper.
  • Pour the tempered yolks back into the saucepan and return to medium heat.
  • Whisk for 3-5 minutes until thickened and coats the back of the spoon.
  • Stir in vanilla extract and allow to cool to room temperature.
  • Refrigerate for at least one hour.

Whip the Cream

  • In a mixing bowl, beat heavy cream with powdered sugar and salt until soft peaks form.
  • Continue to beat until stiff peaks form.

Combine and Set

  • Gently fold whipped cream into chilled caramel custard until combined.
  • Spoon into serving dishes and refrigerate for at least 2 hours until set.
