  • 1 can (10 oz) Rotel diced tomatoes with green chilies, well drained Ensure they are well-drained to avoid sogginess.
  • 1.5 cups Bisquick baking mix This binds all ingredients together.
  • 0.5 tsp garlic powder (optional) Adds depth but can be omitted if unavailable.

Preparation

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the breakfast sausage, shredded cheddar cheese, well-drained Rotel, Bisquick baking mix, and garlic powder (if using).
  • Mix everything with your hands until fully combined.
  • Roll the mixture into 1-inch balls and place them on the prepared baking sheet.
  • Bake for about 20-25 minutes until golden brown and cooked through.
  • Allow to cool slightly, then serve warm with your favorite dipping sauce.

Notes

For best results, do not overmix, use quality ingredients, and ensure the Rotel is well-drained to avoid soggy texture. They can be made ahead and frozen.
