Cajun Cream Sauce

Instructions
 

Preparation of Grits

  • In a saucepan, bring 4 cups of water to a boil and stir in the grits. Reduce heat and cook until thickened, about 20 minutes. Stir in butter, salt, and pepper to taste.

Cooking Shrimp

  • In a skillet, heat a tablespoon of butter over medium heat, add shrimp, and cook until pink, about 2-3 minutes per side. Remove and set aside.

Cajun Cream Sauce

  • In the same skillet, add heavy cream and Cajun seasoning; cook until thick and bubbly. Return shrimp to the skillet and mix.

Pan-Frying Snapper

  • Season red snapper with salt and pepper. Pan-fry in the skillet until cooked through, about 4-5 minutes per side.

Serving

  • To serve, place grits on a plate, top with shrimp and sauce, and place the red snapper on the side. Garnish with green onions.

Notes

For best results, use stone-ground grits, and serve immediately as the dish loses its magic if left to sit. You can substitute shrimp with salmon or scallops and try cauliflower for a low-carb twist.
