Ingredients
  

Cake Base

  • 1 cup all-purpose flour Use a good quality flour for fluffy results.
  • 1 teaspoon baking powder This is our rising agent.
  • 1/4 teaspoon salt Brings out all the flavors.
  • 3 large eggs Packed with protein.
  • 3/4 cup granulated sugar Adds sweetness to the cake.
  • 1/2 teaspoon vanilla extract Enhances the flavor.
  • 1/3 cup milk Adds moisture to the batter.

Filling

  • 1/2 cup raspberry preserves The main flavor of the roll.
  • powdered sugar for dusting For a festive touch.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and grease a 15x10 inch jelly roll pan.
  • In a mixing bowl, combine flour, baking powder, and salt; whisk together.
  • In another bowl, beat the eggs and granulated sugar until thick and pale, then add vanilla and milk.
  • Gradually add the flour mixture to the egg mixture and gently mix until just combined.
  • Spread the batter evenly in the prepared pan and bake for about 12-15 minutes.

Rolling the Cake

  • Once baked, flip the cake onto a kitchen towel dusted with powdered sugar.
  • Spread raspberry preserves over the warm cake and roll tightly using the towel.
  • Let the roll cool completely and unroll gently; add more preserves if desired, and reroll.
  • Dust with powdered sugar before serving.

Notes

Store leftovers in the fridge for 2-3 days. Can be reheated in the microwave for 10 seconds.
