  • 4 pieces boneless, skinless chicken breasts I usually go for organic or free-range for better flavor and quality.
  • 1 packet ranch seasoning mix A great time-saver and flavor enhancer.
  • 1 can (10.5 oz) cream of chicken soup Canned variety is a lifesaver.
  • 1/2 cup chicken broth Adds depth to the dish.
  • 1/2 cup sour cream You can go light on this for fewer calories.
  • 1/2 teaspoon garlic powder Adds an aromatic punch.
  • 1/2 teaspoon onion powder Adds sweetness.
  • 1/4 teaspoon black pepper Just enough to bring out all those taste buds.
  • 1 tablespoon olive oil Optional for searing.
  • 1 cup shredded cheddar cheese Optional; use sharp cheddar for a robust flavor.
  • fresh parsley to taste for garnish Optional; adds color.

Instructions
 

Preparation

  • Start with an optional sear of the chicken in olive oil; it adds flavor but can be skipped if you're short on time.
  • In a bowl, mix cream of chicken soup, ranch seasoning, chicken broth, garlic powder, onion powder, and black pepper.

Cooking

  • Place chicken in the crock pot, pour the mixture over it, cover, and cook on low for 6-7 hours or high for 3-4 hours.
  • Shred the chicken, mix in the sour cream, and stir until combined.
  • Optional: Top with shredded cheese and garnish with parsley before serving.

Notes

Serve over rice, baked potatoes, or with a side salad. Leftovers can be stored in an airtight container in the fridge for up to 4 days.
