  • 2 cups Baby Spinach Add at the end to wilt slightly.
  • 2 tablespoons Fresh Parsley Chopped for garnish.
  • 0.25 cup Parmesan Cheese Freshly grated for a creamy texture. Use nutritional yeast for a vegan option.

Instructions
 

Preparation

  • Boil salted water in a large pot for the orzo pasta, and cook according to package instructions (about 8-10 minutes). Drain and set aside, reserving a bit of pasta water.
  • In a large skillet, heat olive oil over medium heat. Sauté shrimp for 3-4 minutes on each side until pink and opaque. Season with salt and pepper.
  • Remove shrimp from skillet and add minced garlic. Cook for 1 minute until fragrant.

Cooking

  • Add chicken broth and white wine to the skillet, bring to a simmer.
  • Stir in lemon zest and juice, then add cooked orzo back to the skillet. If it appears dry, add reserved pasta water to achieve creaminess.
  • Fold in baby spinach until just wilted and return shrimp to the skillet. Season with more salt, pepper, and crushed red pepper flakes if desired.

Serving

  • Plate the dish, garnish with fresh parsley and Parmesan cheese shavings.
