Wet Ingredients

  • 1 cup pumpkin puree Canned or fresh.
  • 0.5 cup white sugar Regular sugar for sweetness.
  • 0.5 cup brown sugar Adds moisture and flavor.
  • 0.5 cups vegetable oil Creates a moist muffin.
  • 2 large eggs Essential for binding.
  • 1 tsp vanilla extract Enhances flavor.

Cream Cheese Filling

  • 4 oz cream cheese Needs to be softened.
  • 0.25 cup powdered sugar Sweetens the cream cheese.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • In a separate bowl, mix pumpkin puree, white sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well combined.

Combine and Fill

  • Slowly add the dry ingredients to the wet mixture, folding gently.
  • In another bowl, beat together the cream cheese and powdered sugar until smooth.
  • Fill each muffin cup halfway with pumpkin batter, drop in a spoonful of cream cheese filling, then top with more pumpkin batter until cups are 3/4 full.
  • Gently swirl the cream cheese into the pumpkin batter using a toothpick or knife.

Baking and Cooling

  • Bake muffins in the preheated oven for 18-22 minutes, or until a toothpick comes out clean.
  • Let them cool in the pan for about five minutes before transferring to a wire rack.

Notes

Store muffins in an airtight container at room temperature for 2-3 days, or refrigerate for up to a week. Reheat in the microwave for 15-20 seconds.
