Preparation

  • Gather your ingredients and set up your workspace.
  • Rinse quinoa in cold water using a fine mesh strainer.

Cooking

  • In a large skillet, heat olive oil over medium heat and sauté onions until soft (about 3-4 minutes).
  • Add minced garlic to the skillet and cook until fragrant.
  • Add diced chicken seasoned with salt, pepper, cumin, and paprika; cook until golden brown (about 5-6 minutes).
  • Stir in the bell pepper and cook until slightly softened but still crisp.
  • Add quinoa, mixing well for 2 minutes.
  • Pour in chicken broth, stir, and bring to a simmer. Lower heat, cover, and let it cook for about 15 minutes.
  • Check quinoa for fluffiness; if not done, let it sit a little longer.
  • Fluff with a fork and serve with desired toppings.

Notes

If you want to elevate the dish, marinate the chicken in spices the night before. Add a splash of lemon juice at the end for brightness. Feel free to improvise with whatever veggies you have on hand.
