Preparation

  • Place shelled pistachios into a food processor and pulse until finely ground.
  • In a large mixing bowl, combine softened cream cheese, heavy cream, sugar, and vanilla extract. Beat until smooth and creamy.
  • Fold in the ground pistachios into the cheesecake mixture.

Assembly

  • Prepare dessert glasses by creating a layer of crushed graham crackers at the bottom.
  • Spoon a layer of the cheesecake mixture on top of the graham crackers.
  • Drizzle a layer of blackberry puree over the cheesecake layer.
  • Repeat the layers of graham crackers, cheesecake, and blackberry puree until the glasses are filled.
  • Cover and chill in the refrigerator for at least 4 hours or until set.
  • Garnish with fresh blackberries just before serving.
