Persian Jeweled Rice

Ingredients
  

For the Rice

  • 2 cups basmati rice Make sure to rinse thoroughly.
  • 4 cups water
  • 1/4 cup unsalted butter For sautéing.
  • 1/4 cup vegetable oil For sautéing.
  • 1 medium onion, finely chopped
  • 1 teaspoon ground cinnamon Adds warmth and aroma.
  • 1/2 teaspoon ground cardamom For that mystical sweetness.
  • 1/2 teaspoon ground turmeric For color and flavor.
  • 1/2 teaspoon salt To enhance flavors.

For the Garnish

  • 1/2 cup dried apricots, chopped Sweet bite.
  • 1/2 cup raisins Adds chewy texture.
  • 1/2 cup slivered almonds For crunch.
  • 1/2 cup pistachios, chopped Enhances flavor.
  • 1/4 cup pomegranate seeds Adds freshness.
  • 1/4 cup fresh parsley, chopped For garnish.
  • 1 tablespoon orange zest Adds citrus flavor.
  • 1 tablespoon lemon zest Adds brightness.

Instructions
 

Preparation

  • Rinse basmati rice until the water runs clear; soak for 30 minutes, then drain.
  • Boil 4 cups of water in a pot; add rice and cook for about 10 minutes until al dente. Drain and set aside.

Sautéing

  • In the same pot, melt butter and oil. Sauté chopped onions until golden brown.
  • Stir in cinnamon, cardamom, turmeric, and salt. Cook until fragrant.

Layering and Steaming

  • Layer half the cooked rice over the onion mixture, followed by half the dried fruits and nuts. Layer the remaining rice on top with the rest of the fruits and nuts.
  • Cover and reduce heat to low; steam for 30-40 minutes.

Finishing Touches

  • Let sit for 10 minutes; fluff with a fork and fold in pomegranate seeds, parsley, and citrus zests.

Notes

Always rinse the rice well for better texture. Fresh spices work best for flavor.
