  • 1 cup shredded cheese (cheddar or mozzarella) Sharp cheddar adds extra flavor; feel free to use any available cheese.
  • 4 large tortillas or wraps Whole wheat is a healthier option, but regular tortillas work too.
  • 2 tablespoons garlic, minced Add more if desired.
  • 1 tablespoon olive oil Used for sautéing.
  • 1 cup mixed vegetables (bell peppers, onions, etc.) A chance to add various vegetables for extra nutrition.
  • to taste salt and pepper Essential for flavor.

Preparation

  • In a skillet over medium heat, add olive oil. Once hot, toss in minced garlic and sauté until fragrant, about 1 minute.
  • Add shredded chicken and mixed vegetables, seasoning with salt and pepper. Cook for 5-7 minutes until everything is heated through.
  • Lay out tortillas on a clean surface. Optionally, warm the tortillas in the microwave for 10 seconds.
  • Divide the heated chicken mixture evenly among the tortillas, sprinkling cheese generously on top.
  • Roll each tortilla tightly, seam-side down in the skillet.
  • Cook on medium-high heat for 2-3 minutes per side until golden and crispy.
  • Slice in half and serve warm, optionally with hot sauce or guacamole.

Notes

Don’t overstuff the wraps; use good quality cheese and tortillas for best results.
