Preparation

  • Melt the butter in a large pot over medium heat.

  • Pour in chicken broth and bring to a simmer.
  • Add tortellini and stir gently. Cook according to package instructions, usually 5-7 minutes, until tender.
  • Remove from heat, mix in grated Parmesan cheese until melted and creamy.
  • Adjust salt and pepper as needed, then garnish with fresh parsley before serving.

Notes

For a creamier sauce, add a splash of heavy cream before mixing in the cheese. You can also sneak in vegetables like spinach or kale for added nutrition.
