  • 2 pieces boneless and skinless chicken breasts, cut into bite-sized pieces Fresh chicken is preferable, but frozen works too if thawed properly.
  • 3 cups cooked white rice (preferably day-old) Leftover rice absorbs flavors better and has a nice texture.
  • 1/3 cup honey Raw honey works best for depth of flavor.
  • 1/2 cup bold BBQ sauce (smoky or hickory-style) Choose your favorite brand for best results.
  • 1 teaspoon garlic powder Enhances the overall flavor.
  • 1 teaspoon onion powder Adds warmth and balance to the dish.
  • 1 teaspoon smoked or sweet paprika Essential for depth of flavor.
  • 2 tablespoons soy sauce Adds umami and saltiness.
  • 2 tablespoons butter or oil (for frying) Butter adds richness, oil works well too.
  • 1/4 cup chopped green onions Provides freshness and color.
  • to taste salt and pepper Essential for seasoning.

Instructions
 

Preparation

  • Cut the chicken breasts into bite-sized cubes.
  • Toss the chicken pieces in a mixing bowl with garlic powder, onion powder, paprika, salt, and pepper.

Cooking

  • Heat 1 tablespoon of oil or butter in a large skillet over medium-high heat. Add the chicken and cook for 6–8 minutes until golden brown.
  • Remove the chicken from the skillet. Reduce the heat to medium and add the BBQ sauce and honey, stirring until combined and bubbling.
  • Return the chicken to the skillet and let it simmer for 2–3 minutes to soak up the sauce.
  • Push the chicken to one side, add another tablespoon of oil if needed, and stir in the cooked rice and soy sauce, frying for 3–5 minutes until crispy.
  • Combine the chicken and rice, mixing until everything is well-coated. Garnish with green onions before serving.

Notes

Use day-old rice for better texture. Adds veggies like peas or bell peppers for extra flavor. For spiciness, incorporate chili powder or hot sauce into the BBQ sauce.
