Place the beef chuck roast in the slow cooker.
Sprinkle the ranch seasoning mix and au jus gravy mix evenly over the roast.
Cut the unsalted butter into pieces and place on top of the roast.
Add pepperoncini peppers all around and on top of the roast. Add smashed garlic cloves if using.
Cover and cook on low for 7-8 hours or on high for 4-5 hours until the meat is fork-tender.
Remove the roast and peppers from the slow cooker and shred the meat with two forks.
Optional: skim fat from the cooking liquid, then return shredded meat and peppers to the juices and stir well.
Serve hot with spoonfuls of the cooking juices poured over the top.
