Preparation

  • Preheat the oven to 400°F (200°C).
  • Heat olive oil in a skillet over medium heat and caramelize the sliced onions for 10-15 minutes until golden brown.
  • Add the diced ribeye and bell peppers to the skillet. Cook until the meat is browned, about 5-7 minutes.
  • Season with salt and pepper, stirring well to combine.
  • Roll out the puff pastry sheets on a floured counter and cut into 4-5 inch squares.
  • Lightly grease a muffin tin and press each pastry square into the tin, allowing corners to hang over.
  • Spoon the meat mixture into each cup, filling about three-quarters full, and top with shredded cheese.
  • Bake in the preheated oven for 15-20 minutes or until the pastries are puffed and golden brown.
  • Allow to cool slightly before serving.

Notes

For best results, do not overfill the cups, and ensure the cheese is melted. Use fresh ingredients for added flavor.
