For the Roasted Cauliflower

  • 1 large head large head of cauliflower, cut into florets Choose a firm, creamy white head.
  • 3 tablespoons olive oil Use high-quality extra-virgin for best flavor.
  • 1 teaspoon salt Enhances the flavors of other ingredients.
  • 1/2 teaspoon black pepper Adjust to taste.
  • 1 teaspoon garlic powder Adds depth of flavor.
  • 1 teaspoon onion powder Adds sweetness.
  • 1 teaspoon paprika For a hint of smokiness.
  • 1 teaspoon dried thyme Can substitute with other herbs if desired.
  • 1/2 cup grated Parmesan cheese You can substitute with dairy-free cheese for a vegan option.
  • 1 tablespoon fresh parsley, chopped Optional, for garnish.

Instructions
 

Preparation

  • Preheat the oven to 425°F (220°C).
  • In a large bowl, add the olive oil, salt, black pepper, garlic powder, onion powder, paprika, and dried thyme. Whisk until combined.
  • Add the cauliflower florets to the bowl and toss to coat them evenly with the spice mixture.

Roasting

  • Spread the coated cauliflower out in a single layer on a baking sheet lined with parchment paper.
  • Roast in the preheated oven for 20 minutes.
  • After 20 minutes, sprinkle the grated Parmesan cheese over the cauliflower.
  • Return the baking sheet to the oven for another 10 minutes, or until the cheese is melted and the cauliflower is golden brown.

Serving

  • Let the roasted cauliflower cool slightly, then garnish with fresh parsley and serve.

Notes

For best results, choose a fresh cauliflower and do not overcrowd the pan while roasting. Leftovers can be stored in an airtight container in the fridge for up to 4 days.
