For the Carrots

  • 1 lb carrots Preferably organic; use a mix of colors for visual appeal.
  • 2 tablespoons olive oil Adds richness and helps the glaze stick.

For the Maple Dijon Glaze

  • 1.5 tablespoons pure maple syrup Always go for real maple syrup.
  • 1 tablespoon Dijon mustard Good quality brand preferred.
  • 1 teaspoon balsamic vinegar Adds depth and a hint of acidity.
  • 0.5 teaspoon garlic powder Fresh minced garlic can be used as a substitute.
  • 0.5 teaspoon salt Essential for seasoning.
  • 0.25 teaspoon black pepper Essential for seasoning.
  • 0.5 teaspoon dried thyme Fresh thyme can also be used.
  • 0.25 teaspoon red pepper flakes Optional for those who enjoy a little heat.

For Garnish

  • Chopped fresh parsley For garnish.
  • Crumbled feta or goat cheese Optional addition for creaminess.
  • Toasted nuts (walnuts, pecans, or almonds) For added crunch.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or grease it with oil.
  • Peel larger carrots and cut them into even-sized sticks; baby carrots can be left whole. Rinse and pat dry.

Maple Dijon Glaze

  • In a small bowl, whisk together olive oil, maple syrup, Dijon mustard, balsamic vinegar, garlic powder, salt, pepper, thyme, and red pepper flakes if using.

Roasting

  • Place carrots in a mixing bowl, pour the glaze over them, and toss until well coated.
  • Spread carrots in a single layer on the prepared baking sheet.
  • Roast for 20-25 minutes, flipping halfway through for even cooking, until they're tender and caramelized.

Serving

  • Transfer roasted carrots to a serving dish and garnish with parsley, cheese, and nuts if desired. Serve warm.

Notes

For best results, use fresh thyme and don't skip flipping the carrots for even caramelization. Experiment with the glaze by substituting mustard or adding honey for sweetness.
