  • 1.5 pounds boneless, skinless chicken thighs or breasts Using thighs offers more flavor and moisture.
  • 1 tablespoon olive oil or sesame oil Sesame oil gives a more authentic Asian flavor.

  • 1 teaspoon garlic powder For added depth.

Mango Glaze Ingredients

  • 1 ripe mango (peeled and chopped) or ¾ cup mango purée Fresh mango is best, but purée can be used.
  • 2 tablespoons low-sodium soy sauce Balances the sweetness.
  • 1 tablespoon honey or maple syrup Honey provides richness.
  • 1 tablespoon rice vinegar or lime juice Rice vinegar preferred, but lime adds zing.
  • 2 cloves garlic, minced Fresh garlic is best.
  • 0.5 teaspoon fresh grated ginger Adds refreshing kick.
  • 0.5 teaspoon chili flakes (optional) Adjust to taste.
  • 1 teaspoon cornstarch mixed with 2 tablespoons water Thickens the glaze.

Instructions
 

Prepare the Glaze

  • Peel and chop the mango, then blend it until smooth. If using purée, skip blending.
  • Combine blended mango with soy sauce, honey (or maple syrup), rice vinegar (or lime juice), minced garlic, ginger, and chili flakes in a saucepan.
  • Simmer on medium heat for a few minutes, then reduce heat to low and let it cook for 5-6 minutes.
  • Stir in the cornstarch slurry and cook until the glaze thickens, about 1-2 minutes.

Cook the Chicken

  • Season chicken with salt, pepper, and garlic powder.
  • Heat oil in a skillet over medium-high heat and add chicken, cooking for 6-8 minutes until golden brown.

Glaze and Toss

  • Reduce heat to low, pour the mango glaze over the cooked chicken, and toss to coat.
  • Simmer for an additional 2-3 minutes.

Serve and Garnish

  • Serve over jasmine rice or noodles and garnish with green onions, sesame seeds, cilantro, or Thai basil.
  • A squeeze of lime enhances the flavor.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat gently on the stovetop for best results.
