Dry Ingredients

  • 2 cups flour Base for cake texture.
  • 2 teaspoons baking powder Ensure freshness.
  • 0.5 teaspoon baking soda Adds extra rise.
  • 0.25 teaspoon salt Balances flavors.

Optional Ingredients

  • 0.5 cup shredded coconut Adds texture and flavor.
  • 1 cup sliced pineapple or cherries For decoration and extra flavor.
  • powdered sugar to taste optional powdered sugar For dusting.

Instructions
 

Preparation

  • Preheat oven to 175°C (350°F) and grease a 23×33 cm cake pan.
  • In a large mixing bowl, beat eggs and sugar until frothy (3-5 minutes), then add vegetable oil, pineapple juice, and vanilla.

Mixing

  • In a separate bowl, combine flour, baking powder, baking soda, and salt.
  • Gradually stir dry ingredients into the wet mixture until smooth, but do not overmix.

Baking

  • Pour the batter into the prepared pan and smooth the top. Bake for 35-40 minutes, until a toothpick comes out clean.

Cooling and Serving

  • Cool in the pan for 10 minutes, then transfer to a wire rack.
  • Decorate with coconut, pineapple or cherries, and dust with powdered sugar if desired.

Notes

Ensure baking powder is fresh for best results. Add lemon zest for extra flavor, if desired.
