Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together olive oil or melted butter, garlic powder or minced garlic, salt, pepper, and dried herbs.
Add bread cubes and toss gently until evenly coated.
Spread bread cubes in a single layer on the prepared baking sheet.
Bake for 10 minutes, then stir or shake pan and bake another 5-10 minutes until golden and crispy.
Remove from oven and cool completely on baking sheet to crisp up further.
Store in an airtight container at room temperature for up to 1 week or freeze for longer storage.
