  • 1 teaspoon Paprika For warmth and slight sweetness.
  • 1 teaspoon Dried oregano Gives a comforting Mediterranean vibe.
  • 2 tablespoons Lemon juice Tenderizes chicken and enhances flavor.
  • to taste Salt and black pepper Adjust according to personal preference.
  • 3 cups Mixed vegetables (like broccoli, bell peppers, or carrots) Can substitute with frozen vegetables.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Rinse the chicken under cold water and pat dry with paper towels.
  • In a medium bowl, whisk together olive oil, garlic powder, paprika, oregano, lemon juice, salt, and pepper.
  • Place the chicken in a baking dish and pour the marinade over it. Massage the marinade into the chicken.
  • Arrange the mixed veggies around the chicken in the baking dish, drizzling a bit more olive oil and sprinkling with salt and pepper.

Cooking

  • Bake in the preheated oven for about 25-30 minutes, checking on it midway through.
  • For crispy skin, broil for the last 3-5 minutes, but watch closely to prevent burning.
  • Ensure the chicken reaches an internal temperature of 165°F (75°C) before removing from the oven.
  • Let the chicken rest for about 5 minutes before slicing.
  • Serve and enjoy, drizzling the juices from the baking dish over the chicken.

Notes

For best results, marinate longer if possible. Consider adding a teaspoon of honey for sweetness, and don't overcrowd the baking dish.
