Ingredients

  • 2 tablespoons olive oil Extra virgin for a fancier touch
  • 2 cloves garlic, minced Increase amount for more garlic flavor
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano Adds Mediterranean flavor

Main ingredients

  • 2 cups fresh mushrooms Button or portobello work well
  • skewers Wooden or metal; soak wooden skewers before use

Instructions
 

Preparation

  • Preheat the grill to medium heat.
  • In a bowl, combine olive oil, minced garlic, salt, black pepper, and dried oregano.
  • Toss the mushrooms in the marinade until well-coated.

Assembly

  • Thread the marinated mushrooms onto skewers, ensuring not to overcrowd.

Cooking

  • Grill the skewers for about 10-15 minutes, turning occasionally, until the mushrooms are tender and have lovely grill marks.
  • Serve warm, optionally drizzled with leftover marinade.

Notes

For best results, marinate mushrooms for at least 30 minutes, or overnight. Experiment with different herbs or spices for variety.
