Ingredients
  

Meatball Ingredients

  • 500 g ground beef Lean ground beef is preferred.
  • 500 g ground pork Adds juiciness to the meatballs.
  • 1 unit onion, finely grated Don't substitute with onion powder.
  • 2 cloves garlic, minced Fresh garlic is essential.
  • 2 unit eggs Acts as a binder.
  • 1 cup breadcrumbs Italian breadcrumbs recommended.
  • 1/2 cup milk Can use almond or oat milk for dairy-free.
  • 1/4 cup chopped fresh parsley Adds brightness.
  • 1 tsp dried oregano Essential for Greek flavor.
  • 1 tsp salt Enhances flavor.
  • 1/2 tsp black pepper Basic seasoning.
  • 2 tbsp olive oil For frying.
  • 2 tbsp flour For dusting meatballs.

Lemon Sauce Ingredients

  • 2 cups chicken or vegetable broth Stock can deepen flavor.
  • 1/3 cup fresh lemon juice Fresh is crucial.
  • 2 tbsp butter For creaminess.
  • 2 tbsp flour For thickening the sauce.

Instructions
 

Preparation

  • In a large bowl, mix together the ground beef, ground pork, grated onion, minced garlic, eggs, breadcrumbs, milk, chopped parsley, oregano, salt, and pepper until combined.
  • Wet your hands and shape the mixture into small oval meatballs.
  • Dust each meatball lightly with flour and place them on a tray.

Cooking

  • Heat olive oil in a large skillet over medium heat. Add meatballs in batches, frying until golden brown on all sides, about 6-8 minutes.
  • Remove meatballs and set aside.
  • In the same skillet, lower the heat and add the 2 tbsp of flour for the sauce. Whisk for about a minute.
  • Slowly add the broth while whisking to create a smooth sauce base.
  • Add the lemon juice and butter, whisking until the sauce thickens.
  • Return the meatballs to the pan, cover, and let simmer on low for 15-20 minutes.

Notes

Serve with rice, mashed potatoes, or a side salad. Store leftovers in an airtight container for 3-4 days.
