Main Ingredients

  • 4 pieces chicken fillets Juicy and high in protein.
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp sweet paprika
  • 1 tbsp olive oil For sautéing.
  • 1 tbsp unsalted butter For a rich finish.
  • 1 piece shallot Finely chopped.
  • 4 cloves garlic Minced.
  • ¼ cup dry white wine Like Pinot Grigio.
  • 2 tbsp tomato paste Concentrated flavor.
  • ½ cup chicken broth Keeps everything moist.
  • 1 can (14 oz) cherry tomatoes Adds sweetness and acidity.
  • 3 tbsp chopped basil leaves For finishing.
  • 2 balls mozzarella Chopped.
  • 3 tbsp grated Parmesan A bit of sharpness.
  • to taste crushed red pepper flakes For added heat.

Instructions
 

Preparation

  • Mince the garlic, finely chop the shallot, and dice the mozzarella into cubes.
  • Season both sides of the chicken fillets with salt, pepper, garlic powder, and sweet paprika.

Cooking

  • Preheat your oven to 200 °C (400 °F).
  • Heat olive oil and butter in a large, ovenproof skillet over medium-high heat.
  • Cook the seasoned chicken fillets for about 5 minutes per side until browned and then place on a plate, covering with foil.
  • In the same skillet, add minced garlic and shallots; sauté for about 2 minutes until fragrant.
  • Pour in the white wine and simmer for about 2 minutes, scraping up any browned bits.
  • Add salt, pepper, dried basil, and tomato paste; stir and cook for another minute.
  • Pour in the chicken broth and the canned cherry tomatoes; bring to a boil, then reduce to a simmer for 5 minutes.
  • Nestle the chicken back into the sauce, sprinkle with chopped basil and mozzarella.
  • Let simmer for 5 minutes until flavors meld or transfer to the oven for 10 minutes until golden.
  • Serve hot.

Notes

Add olives or sun-dried tomatoes for an adventurous twist. Use fresh herbs for better flavor.
