Cook pasta in salted boiling water according to package instructions. Reserve 1/2 cup pasta water, drain, and set aside.
Heat olive oil in a large skillet over medium heat. Add sausage slices and cook until browned and crispy, about 4-5 minutes. Remove and set aside.
In the same skillet, melt butter. Add minced garlic and red pepper flakes; sauté for 1-2 minutes until fragrant.
Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese, salt, and pepper. Cook until sauce slightly thickens, about 3-4 minutes.
Add cooked pasta to the skillet and toss to coat in the sauce. Use reserved pasta water to loosen sauce if needed.
