Instructions
 

Prepping the Oven and Water Bath

  • Preheat your oven to 325°F (163°C).
  • Prepare a large roasting pan with water for the water bath.

Crust Creation

  • Mix graham cracker crumbs, melted butter, and brown sugar in a bowl.
  • Press the mixture into the bottom of a 9-inch springform pan.
  • Wrap the pan with heavy-duty foil.

Mixing the Filling

  • In a bowl, beat the cream cheese with granulated sugar and brown sugar until smooth.
  • Mix in sour cream and heavy cream, along with vanilla and butter extracts.
  • Add eggs one at a time, mixing gently.
  • Fold in the butterscotch sauce.

Assembling and Baking

  • Pour the filling into the prepared crust.
  • Place the foil-wrapped pan into the roasting pan and add hot water halfway up the sides.
  • Bake for 60 to 70 minutes until the edges are set.
  • Cool in the oven for an hour, then at room temperature before refrigerating for at least 6 hours.

Topping It Off

  • Top with whipped cream, and drizzle with caramel and butterscotch sauce before serving.
  • Slice with a hot knife for clean cuts.
