  • 2 pieces salmon fillets Rich in omega-3 fatty acids and full of flavor.
  • 2 pieces potatoes Yukon gold preferred for creamy texture.
  • 1 cup mixed vegetables (like broccoli, carrots, and peas) Adds color, crunch, and vital nutrients.
  • 2 tablespoons butter Essential for creamy mashed potatoes.
  • to taste salt and pepper For seasoning.
  • to drizzle olive oil To keep the salmon from sticking.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Season the salmon fillets with salt, pepper, and a drizzle of olive oil. Place them skin-side down on a baking sheet lined with parchment.
  • Peel and chop the potatoes into chunks and place them into a pot of salted water.

Cooking

  • Bake the salmon for about 12-15 minutes until flaky and opaque.
  • Boil the potatoes for 15-20 minutes until tender.
  • While the salmon and potatoes are cooking, steam or boil the mixed veggies until vibrant and tender.
  • Drain the potatoes, add butter, and mash until smooth or chunky to your liking.
  • For the last 2 minutes of baking, broil the salmon to achieve crispy skin.

Serving

  • Plate the salmon, serve with a scoop of creamy mashed potatoes and colorful mixed veggies.

Notes

Make sure your salmon is at room temperature before cooking for even results. Optionally garnish with fresh herbs or a squeeze of lemon juice before serving.
