Preparation

  • Preheat your oven to 350°F (175°C) and prepare your baking pan by greasing it with 5 tablespoons of salted butter.
  • In a large mixing bowl, cream together 2 tablespoons of salted butter and 8 ounces of cream cheese until smooth and creamy.
  • Add 1 whole egg and 1 egg yolk, mixing until combined.
  • Gradually mix in the 2.5 cups of icing sugar until the batter is thick and frosting-like.
  • In a separate bowl, whisk together 1 cup + 2 tablespoons of all-purpose flour, 1/4 to 1/2 teaspoon of salt, and any baking powder or soda needed.
  • Gently fold the dry mixture into the wet batter to avoid overmixing.
  • Fold in 1.25 cups of chopped pecans.
  • Pour the batter into the prepared pan and spread it evenly.

Baking

  • Bake in the preheated oven for about 60 minutes or until a toothpick inserted comes out clean.
