Crispy Potato Skins

Golden and crispy potato skins loaded with melted cheddar, crispy halal bacon, and fresh green onions. Perfect as a delicious appetizer or game day snack that's easy to make and endlessly customizable.

Ingredients
  

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 4 slices halal bacon, cooked and crumbled
  • 2 tablespoons green onions, sliced
  • to taste sour cream (optional)

Instructions
 

  • Preheat oven to 400°F (200°C). Scrub potatoes clean and pierce each with a fork several times.
  • Bake potatoes directly on the oven rack for 45–50 minutes, until tender. Let cool slightly.
  • Cut each potato in half lengthwise. Scoop out the flesh, leaving about 1/4 inch of potato on the skins.
  • Brush potato skins inside and out with olive oil. Season with salt and black pepper.
  • Place skins on a baking sheet, skin side down. Bake for 10 minutes, then flip and bake another 5–10 minutes until crisp.
  • Fill each skin with shredded cheese and crumbled bacon. Bake for 5 minutes more, until cheese is melted.
  • Remove from oven, sprinkle with green onions, and serve warm with sour cream if desired.
