  • 1 large egg Helps hold the mixture together.

Preparation

  • Peel and grate the medium potatoes into a large bowl until you have around 3 cups of grated potatoes.
  • Add in the grated cheese, all-purpose flour, and a generous pinch of salt and pepper. Mix until combined.
  • In a separate bowl, beat the egg and then pour it into the potato mixture, combining everything into a cohesive mass.
  • Shape the mixture into sticks or logs, aiming for about 3 inches long and 1 inch thick.
  • Coat each stick generously in breadcrumbs.
  • Heat oil in a frying pan over medium heat until it shimmers.
  • Carefully place the potato sticks in the oil, frying until golden brown on all sides, approximately 3-4 minutes each.
  • Remove the sticks and drain them on paper towels.
  • Serve hot with your favorite dipping sauce.

Notes

For best results, do not overcrowd the pan and let the sticks rest before serving. You can prepare and freeze the sticks ahead of time for later frying.
