Preparation

  • Gather all your ingredients and tools: a mixing bowl and a frying pan.
  • In a spacious bowl, combine the mashed potatoes, shredded cheese, green onions, egg, and a pinch of salt and pepper. Mix until well combined.
  • Take a spoonful of the mixture and roll it into a ball or patty. Aim for rustic shapes.
  • Roll each ball in breadcrumbs to coat evenly.
  • Pour oil into your frying pan about half an inch deep and heat over medium heat.

Cooking

  • Once the oil is hot, gently place the potato bites into the oil and fry for about 3-4 minutes on each side until golden brown and crispy.
  • Avoid overcrowding the pan as this leads to steaming rather than frying.
  • Once cooked, drain on paper towels and serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to three days, reheating in a toaster oven or pan to retain crispiness. For meal prep, you can freeze assembled bites and fry from frozen.
