Ingredients
  

Main ingredients

  • 2 cups sweet tomatoes (grape or cherry)
  • 6 cloves fresh garlic unpeeled
  • 1 cup whole milk ricotta cheese for creaminess
  • 8 ounces pasta any shape, spaghetti or penne recommended
  • 2 tablespoons extra virgin olive oil for roasting
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Optional garnishes

  • 1 tablespoon fresh basil chopped, for garnish

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • On a baking sheet, arrange the tomatoes and unpeeled garlic cloves. Drizzle with olive oil and season with salt and pepper, tossing to coat.

Roasting

  • Roast in the oven for about 20 minutes until the tomatoes are soft and caramelized.

Blending

  • Transfer the roasted tomatoes and garlic to a blender. Add ricotta cheese and blend until smooth, adding a splash of pasta water for creaminess if needed.

Cooking Pasta

  • Cook the pasta according to package instructions until al dente. Reserve some pasta water before draining.

Combining

  • Add the drained pasta to the blended sauce. Toss to combine, adding reserved pasta water if the sauce is too thick.

Serving

  • Serve immediately, garnishing with fresh basil if desired.

Notes

Roast tomatoes longer for deeper caramelization. Adjust seasoning to taste.
