Preparation

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, toss the cherry tomatoes and garlic cloves with olive oil, salt, and pepper.
  • Spread the tomatoes and garlic on a baking sheet and roast for about 20 minutes.
  • Let them cool slightly and then pour everything into a blender.
  • Add the ricotta cheese and blend until smooth.
  • Cook your pasta according to package instructions.
  • Drain the pasta and return it to the pot.
  • Pour the creamy sauce over the cooked pasta and toss gently.
  • Serve hot, garnished with fresh basil.

Notes

Leftovers can last about 3 to 5 days in the fridge. Reheat with a splash of water or olive oil to restore creaminess.
