Main Ingredients

  • 8 oz Pasta (penne or fusilli) Use any pasta you love.
  • 2 tbsp Olive Oil For sautéing garlic and chicken.
  • 2 cloves Garlic Fresh, minced garlic.
  • 1 lb Chicken Breast Diced into bite-size pieces.
  • 1 cup Ricotta Cheese Main ingredient for creaminess.
  • 1/2 cup Parmesan Cheese Grated, adds flavor.
  • to taste Salt and Pepper For seasoning.
  • 1/4 cup Fresh Basil Snipped for garnish.

Instructions
 

Cooking the Pasta

  • Start by boiling water in a large pot. Add a generous amount of salt once it's at a rolling boil.
  • Toss in your pasta of choice and cook according to the package instructions. Drain and set aside, saving a cup of pasta water.

Sautéing Garlic and Chicken

  • Heat a couple of tablespoons of olive oil in a large skillet over medium heat.
  • Add minced garlic and stir until fragrant, about 1 minute.
  • Add diced chicken to the skillet, season with salt and pepper, and cook until no longer pink, about 5-7 minutes.

Combining Ingredients

  • Reduce heat, then stir in ricotta cheese and cooked pasta. Mix everything until well combined, adding reserved pasta water to achieve desired creaminess.
  • Toss in grated Parmesan cheese and mix again.

Garnishing and Serving

  • Garnish with snipped fresh basil.
  • Serve hot in generous portions.

Notes

For the best results, taste as you go and adjust seasonings. Feel free to add in any veggies or proteins you enjoy.
