A Southern-inspired seafood dish featuring perfectly seared red snapper fillets smothered in a rich, spicy cream sauce. Quick, flavorful, and perfect for a weeknight dinner or elegant weekend meal!
Season the red snapper fillets with Cajun seasoning on both sides.
Heat olive oil in a skillet over medium heat. Sear snapper fillets for about 2–3 minutes per side until lightly browned. Remove from the skillet and set aside.
In the same skillet, melt butter and sauté minced garlic for about 30 seconds until fragrant.
Add chicken or seafood broth and bring it to a simmer, scraping up any browned bits left from the snapper.
Stir in the diced tomatoes and heavy cream, and cook for about 5–7 minutes until the sauce thickens.
Return the snapper fillets to the skillet, spooning some of the sauce over the top. Let it simmer for another 2–3 minutes to ensure the fillets are heated through.
Garnish with chopped parsley and serve immediately.
