  • 2 cups water To soften the dates.

  • 2 large eggs Provides stability and structure.
  • 1 cup all-purpose flour Creates the body of the pudding.
  • 1 tsp baking powder Helps the pudding rise.

Toffee Sauce

  • 1/2 cup heavy cream Makes the sauce rich and delicious.
  • 1/2 cup dark brown sugar For enhancing caramel notes.
  • 2 tbsp unsalted butter Adds richness to the sauce.
  • 1 tsp vanilla extract Rounds out the flavors.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease an 8-inch square baking dish.
  • In a small pot, bring 2 cups of water to a simmer and add the chopped Medjool dates. Let them soften for about 5 minutes before draining.
  • Mash the softened dates into a chunky paste.

Mixing

  • In a mixing bowl, cream together the softened butter and dark brown sugar until it's light and fluffy.
  • Add in the eggs one at a time, mixing well after each addition.
  • Gradually mix in the flour and baking powder until just combined.
  • Fold in the mashed date mixture.

Baking

  • Pour the batter into the greased baking dish and level it out.
  • Bake for about 35 minutes, or until golden brown and a toothpick inserted in the center comes out clean.

Toffee Sauce

  • In a saucepan over low heat, combine heavy cream, dark brown sugar, butter, and vanilla extract. Stir until melted and bubbling gently, then simmer for about 5 minutes.

Serving

  • Let the pudding cool slightly before slicing into squares. Drizzle the toffee sauce generously over the top before serving.

Notes

Store leftovers in an airtight container in the fridge for up to four days. Reheat the pudding without the sauce to maintain texture.
